Rose wine making with Jerome Pernot from Chateau Leoube. During the interview we discuss the process of making rose wine. In France, with the exception of Champagne, red grapes must be used to make rose. Blending white and red is not allowed. The skins are left in contact for a few days for up to a week to get both colour and flavours into the wine. They are always removed before alcoholic fermentation takes place. We get technical, talking about acidification and chaptalisation, and discuss the maceration and fermentation processes. We talk about the blend and style of the wine which is designed to be food friendly.
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam... I think it is a great resource and an essential revision aid for any WSET 3 students wishing to gain a competitive edge and successfully pass the WSET 3 exam.
