CEO Paul Symington leads the family company with his brother and 3 cousins, having begun working at Symingtons 35 years ago in 1979. He talks us through the history of Port. We also discuss various issues producers have to tackle in the vineyards due to the terrain and climate.
We discuss the grape varieties including Touriga Nacional and the late ripening Touriga Franca, which both give elegance, depth and complexity, and Tinta Barocca which gives the wines backbone.
Paul Symington tells us the story of how Port came to be stored and aged in the city of Oporto rather than in the Douro and he goes onto talk about the distinct regions and climates of the Douro.
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam...
