Producer
Situated in the Serein Valley in France, the 28 hectare vineyard has been in the Jean Defaix's family for four generations and more than 150 years. The vines are situated in amongst the vines of Milly, 2km west of Chablis.

Region
Chablis is northeast of central France, and centred around the town of Chablis. The climate is continental with cold winters and hot summers. The soils are considered very important On the best sites, limestone is overlaid with Kimmeridgian clay, which is high in marine fossils. The best Chablis has a mineral streak to the wine, which is generally considered to come from the soil.
Style
Zingy, fresh, fruity Sauvignon Blanc style wines. High on acidity, big on flavour.
Can be either full of gooseberries, green apples, grassy aromas or more subtle, tropical passion fruit flavours.
The New Zealand style tends to be more intense than the mineral, stony style you’ll find in Sancerre & Pouilly Fume – the home of the Sauvignon Blanc grape in Loire, France. Look out for Chilean Sav Blancs for good value for money.
