Overview
Chris talks about aspects of food and wine matching according to the WSET Level 3 approach, covering how elements of wine such as tannins, acidity, sweetness and alcohol affect the way food tastes. He discusses how the different flavours in food like salt, sweetness, bitterness interact with wine.
Chris sees food & wine matching as a balancing act much like a see-saw, between all the nice things in wine on one side of the see-saw (like sugar, fruit and body) and the nasty stuff (say, tannins, acidity and the heating effect of alcohol) on the other.
