Mike Herrick explains how Pinot Noir wines differ from region to region across New Zealand, from Martinborough to Marlborough through to Central Otago. The further South you go (to cooler climes) the more structure the wines have he says. We also hear how the wines evolve as they age and the difference the closure makes – screwcaps vs corks – to the flavour development.
