We talk flavours and tasting/smelling technique with Dale Smith and Marcia Waters MW from FlavorActiV. We hear how natural flavours are reproduced using different chemicals to re-engineer the flavour. Fascinatingly, smelling/tasting techniques differ depending on the flavour or flavour group, from short sharp sniffs and gentle steady draws to long hard sniffs.
