Overview
In this final interview with Jean-Claude of Paul Mas wines we talk about the different styles of wine that sit under the 8 different Paul Mas brands. Jean-Claude describes the philosophy and thinking behind the Paul Mas style. Firstly, the wines are based only on what Jean-Claude calls the noble type of aromatics (no horse shit). Secondly, they must always be in harmony (good balance) and thirdly the wine must have structure between the different components (e.g. acidity, fruit, tannins). Finally the wine must be elegant - difficult to define but you know when a wine is elegant and when its not (just like a woman).
