Overview
In this second interview we talk about rosé wines with Nathalie Estribeau from Vignoble Foncalieu in the South of France.
They have vineyards from Carcassonne to Beziers with a range of climates and terroirs. Classic rosé grapes are Grenache with blending partners such as Syrah, Carignan and Cinsault but they use lots of different varieties, for example, Picpoul Noir is one of their experimental varieties for making rosé. They do co-fermentation of different grape varieties in order to create more flavour complexity vs blending the wines later on. They do some lees work with rosés but only for 1-3 months maximum to add texture and mouthfeel and give some longevity so that the wine will drink well for up to say 18 months.
