Aglianico del Vulture Wine Making with Elena Fucci

Overview

In this second interview we talk to Elena Fucci about the winemaking processes from hand-picking the grapes, grape selection and the maturation. The grapes are fermented before crushing to minimise the amount of sediment from the thick skin of the Aglianico grapes. The wine has a short maturation of two weeks before pressing the grapes. After the alcoholic fermentation the wines are matured in oak barrels for one year to stabilise the colour and smooth the tannins over a longer period. The wine is then aged in bottle for another year before release. Elena has experimented with different barrel sizes and uses a combination of 200 litre and 500 litre barrels to achieve balance in the wine. Their winery currently produces DOC wines although the region is DOCG, but Elena is also in the process of trialling DOCG wines which require longer ageing.
