Overview
Carl Stub is chairman of the local winegrowers association and they are applying for a PDO for their region. If successful will be only the second PDO for wine in Denmark. They are setting the rules for the grape and styles of wines that would be produced.
We tasted the Stub range and were impressed with the quality of all of the wines tasted.
At Stub, Carl grows three PIWI grape varieties, using Solaris for the whites, a hybrid created in Germany about 50 years ago. For rose styles, they grow Rondo and use it to make still and sparkling rose wines (they do not make red wine from it). The third is called Johannita, a Riesling cross which ripens later than Solaris (October vs September harvest) and can be very acidic, which is good for sparkling wines. They use the traditional method for sparkling, which is a popular style amongst Danes. They also make a dessert wine using Solaris but only in certain vintages if the conditions for botrytis are right. Carl makes an oaked style of Solaris, something he enjoys to drink!
Elsewhere in Denmark, other grapes being grown are Pinot Noir or Spatburgunder clones but it is mostly PIWI grapes that are planted, with Solaris being the most popular but also Muscaris, a cross of Muscat and Solaris, and Souvignier Gris (Seyval Blanc and Zähringer cross).
