Cork adds to wine ageing

The advantages of screw cap vs cork the debate continues! Some recent research has revealed that corks may aid in the maturation process of the wine. And now for the science bit...in particular the migration of phenolics and volatiles of natural cork into wine as it ages. Dr Miguel Cabral Amorims director of R&D said that his job was to consider the reasons behind cork's positive contribution towards long lived wines. He has been looking at phenolics and volatiles and looking at how they contribute to a wine as it ages. His results are expected to be released in a scientific journal in the next couple of months.
