New light reduces tannins & is vegan friendly
A Swiss company has developed an utlraviolet light that reduces harsh tannins. Usually exposing wine to ultraviolet light can be detrimental to colour, tannins and ageing potential. But Vino Flux have found a way of targeting red wine tannins by using specific wavelengths in the UV range without affecting the fruit profile. This tannin condensing process is an alternative to fining, which inadvertently strips flavour. This is also good news for vegans as the technology eliminates the need for animal protein based fining agents.
