Hybrid barrel offers best of both worlds

An Austrian cooper has unveiled the world’s first wine barrel combining wood and stone. Heavier than oak, the patented Hybridfass aims to deliver fresher fruit, clarity and subtle structure in one single vessel.

Developed by Manuel Schön of the fourth-generation Schön cooperage in Lower Austria, the barrel responds to growing winemaker interest in alternatives such as amphorae and concrete eggs, while retaining the benefits of wood. After trials with young producers in the 2024 vintage, the Hybridfass is now ready for market.

Schön, a trained oenologist, says stone plays a “calming” role, allowing wine to settle with minimal oxygen transfer, while wood contributes gentle micro-oxygenation and aromatic complexity. Early models use granite or slate, with options to customise oak type and toast level.

Priced at around €1,200 for a 225-litre barrique, the barrel targets a premium niche. Schön believes it marks just the start of a broader rethink in cooperage.
