D5: Bacakground: Different styles of Sherry with Jeremy Rockett of Gonzalez Byass
Jeremy Rockett of Gonzalez Byass talks us through the process of making different styles of sherry, from Amontillado (an aged Fino) through to dry Oloroso (the nose is sweet, caramel, dried fruit but dry on the palate) and a sweet Oloroso with PX (Pedro Ximenez) added. We finish with an incredibly thick and sweet 100% PX Sherry, perfect poured over ice cream or on its own in place of a pudding. Jeremy offers advice on when to drink and how to keep sherry - the paler the sherry the quicker you should drink it, so treat it the same way as a white wine. The darker the sherry the longer you can keep it after opening the bottle, but reasonably we're talking a month or two rather than years!
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam... I think it is a great resource and an essential revision aid for any WSET 3 students wishing to gain a competitive edge and successfully pass the WSET 3 exam.
