D5: Bacakground: Gonzalez Byass and Fino Sherry with Jeremy Rockett
We speak to Jeremy Rockett marketing director of Gonzalez Byass, a family company established in 1835 and now one of the biggest sherry producers in Spain. . Gonzalez Byass also sell wine as well as sherry and some spirits, in the UK and globally. Jeremy explains how the trend in the last 2-3 years for tapas bars and sherry bars is helping to fuel renewed interest in sherry and invigorate the category.
In this interview we taste the classic fino sherry, Tio Pepe, which is very pale and is aged for about 5 years under flor (a layer of yeast) making it incredibly dry yet light and a perfect match for food. Wine from Palomino grape. We hear how the grapes are selected to into fino or oloroso sherry and Jeremy describes the solera system.
I thought the questions were excellent, an extremely valuable revision tool.
