D1: Maturation: Background: Geoff Merrill on Aged Wines
Geoff is a big fan of aged wines, both reds and whites such as Riesling and Semillons. He tells us how they started to make reserve wines, holding them back to release them once they had some age. We talk about how he makes wines that are suitable to age, using techniques such as fermenting at cooler temperatures, having a smaller berry size from old vines, ageing for around 36 months in new barrels before then ageing the wine in bottle.
We talk about the use of screw cap (Stelvin) vs cork for ageing wines. Geoff has trialled ageing under screw cap v cork and uses them for his reserve wines but does use high quality corks for his top end wine Henley or for high end customers that expect cork, e.g. in China.
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam... I think it is a great resource and an essential revision aid for any WSET 3 students wishing to gain a competitive edge and successfully pass the WSET 3 exam.
