D1: Flavour Chemistry: Spotlight: Aromas in Wine with Sietze Wijma
Sietze Wijma is a wine (and beer) enthusiast based in the Netherlands with his company The Art of Tasting. He delivers wine tastings focusing on flavour chemistry and helping students become better tasters.
Sietze talks us through the science behind aroma compounds found in wine. In this first interview, we discuss primary aromas and the 3 categories the aromas come from which are aromas from grapes (if you were to pick in the vineyard), aromas from precursors and aromas derived from winemaking/fermentation.
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam... I think it is a great resource and an essential revision aid for any WSET 3 students wishing to gain a competitive edge and successfully pass the WSET 3 exam.
