D3: Loire: Background: Bourgueil with Kathleen Van den Berghe from Chateau de Miniere Part 2
Kathleen Van den Berghe from Chateau de Miniere tells us about the different wine styles they are making from Cabernet Franc. They produce a sparkling red, rose, red and also grape juice which is naturally sweet. The sparkling red is not too tannic and has some grape juice added to balance out the tannins, create a drier version of Lambrusco. They use a blend of grapes that have gone through carbonic maceration with grapes that have been cold soaked. The wine sits on the lees for about 2 years and is then disgorged and the grape juice added to balance out the tannins rather than add sweetness. The wine is bottled but fermentation is allowed to continue in the bottle (petillant naturel) to create gentle bubbles rather than a full on sparkling wine. This produces a light, refreshing red wine to accompany food and enjoy in the hot summer months.
They also make dry and sweet wines from Chenin Blanc grown on another estate.
