D3: South West France: Background: Pascal Verhaeghe of the UIVC with an overview of Cahors
Pascal Verhaeghe is the président of the UIVC (Union Interprofessionnelle des Vins de Cahors). With his brother Jean-Marc he owns Chateau du Cèdre, widely regarded as one of Cahors' leading estates.
We talk about the Cahors wine region, its history and wine. Pascal describes the three terraces and how winemakers produce different quality levels of wine on each, from Vin de Pays to IGP and AC Cahors. In his view, the style of Malbec has changed over recent years, from intense, over-extracted, highly tannic wines to a much more accommodating style.
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam... I think it is a great resource and an essential revision aid for any WSET 3 students wishing to gain a competitive edge and successfully pass the WSET 3 exam.
