D3: Loire: Bacakground: Coteaux de Layon with Pierre Jean Sauvion from Chateau du Cleray
Pierre Jean talks to us about sweet wines of Coteaux de Layon which is made with Chenin Blanc, one of the 3 key grapes of the Loire Valley, alongside Melon de Bourgogne and Sauvignon Blanc. The appellation is in Anjou and is named after the river Layon and being located beside the river is fundamental for the management of botrytis or noble rot, bringing humidity in the mornings and wind in the afternoon to dry the grapes out. We talk about the balance between sugar and acidity which is crucial for a great dessert wine and the winemaking process.
I thought the questions were excellent, an extremely valuable revision tool. They really helped highlight areas I thought I had revised and understood but clearly had not, which has enabled me to focus on key areas to revisit and study before going into the exam...
